Trout fillets with herb butter, special potato salad and green beans

Ingredients

    • 2x Trout fillets
    • Drizzle of oil
    • Lemon wedges to serve
    • Green bean for 2 people [20-30]
    • Bottle of chilled white wine to serve
    • For the herb butter
      • 25g butter
      • Tablespoon of fresh chopped parsley
      • Tablespoon of fresh chopped tarragon
    • For the potato salad
      • Tablespoon of mayonnaise
      • Tablespoon of plain yoghurt
      • Tablespoon of creamed horseradish
      • 3-4 cornichons
      • 7-8 capers
      • Tablespoon of fresh chopped chives
      • Dozen new potatoes or 3-4 regular potatoes
      • Salt and pepper

Equipment

    • Steamer
    • 26cm frying pan
    • Chopping board
    • Chefs knife
    • Colendor 
    • Large mixing bowl
    • Small serving bowl
    • Sharp kitchen scissors

Method

Fill the pan for the steamer with boiling water add a 2-3 pinches of salt and bring back to a hard boil

Cut the new potatoes in half or the regular potatoes into a dozen pieces each

Carefully add the potatoes to the pan and plan to cook for 15-20 mins until until cooked but not overly soft

While the potatoes are cooking, put the frying pan on a low heat so that that our not starting from scratch when you come to cook the fish

Add the mayo, horseradish and yoghurt to the mixing bowl

Add a good grind of salt and pepper

Chop the cornishon in half lengthways and then cut each one into 10-12 pieces

Lightly squash the caper then give then a good chopping too

Use the scissors to finely snip / chop the chives into the mixing bowl
